Patelles' A Puerto Rican Recipe

From … http://www.whats4eats.com/vegetables/pasteles-recipe

Patelles pateles Pui

I Needed a recipe for one of my favorite foods to eat with my friends when I was in my High School. growing up days. Now that I'm over 50' and have traveled the world and being back in Philly has been a trip. Anyway, I came across this Puerto Rican recipe because my partners and friends parents were straight up. You could taste the love, in all the food. Thank You for the recipe...icjr

Puerto Rican savory cakes in banana leaves)

Pasteles are Puerto Rican special occasion food. The whole family usually gets together assembly-line-style to make large numbers of these starchy, tamal-like cakes and get them ready for the boiling pot. No Boricuan Christmas is complete without pasteles

Recipe from... http://www.whats4eats.com/vegetables/pasteles-recipe

Thank You!iPhillyCambio

Makes about 12 to 15 pasteles, enough for 6 to 8 people

Masa (dough)

  • Green bananas, peeled and chopped -- 5

  • Green plantain, peeled and chopped -- 1

  • Yautía (taro root), peeled and chopped -- 1 1/2 pounds

  • Russet potato, peeled and chopped -- 1

  • Salt -- to taste

Filling

  • Onion, chopped -- 1

  • Green pepper, seeded and chopped -- 1

  • Garlic, peeled and chopped -- 3-4 cloves

  • Oil -- 2-3 tablespoons

  • Pork butt or shoulder, cut into small cubes -- 2 pounds

  • Tomato sauce -- 1 cup

  • Water -- 1/2 cup

  • Cilantro, chopped -- 1/2 bunch

  • Oregano, dried -- 2 teaspoons

  • Salt and pepper -- to taste

For Assembly

  • Banana leaves, hard spine removed and cut into 12x6-inch rectangles -- 15 pieces

  • Parchment paper, cut into 12x6-inch rectangles -- 15 pieces

  • Kitchen string --15 (20-inch long) pieces and 30 (10-inch long) pieces

  • Achiote or vegetable oil -- 1/4 cup

Method

Masa

  1. As you chop the bananas, plantain, yautía and potato, place the chunks into a large pot of cold, salted water to keep them from browning.

  2. Drain the water and puree the chopped ingredients in batches in a food processor. Add a little water or milk as needed to make a soft dough with the consistency of cooked oatmeal. You may have to let the processor run for a while, and make sure to scrape down the sides. Remove the masa to a large bowl and season with salt. Chill in the refrigerator while you make the filling.

Filling

  1. Add the onion, pepper and garlic to a food process and pulse to chop finely.

  2. Heat the oil in a large saucepan over medium flame. Add the onion-pepper mixture and sauté for 3-4 minutes. Add the rest of the filling ingredients and simmer over medium-low heat for 20 minutes. Remove from heat, adjust seasoning and allow to cool.

Assembly

  1. Get the masa, the pork filling and all of your assembly ingredients together in a workspace. Lay out a piece of parchment paper, then center a piece of banana leaf over it. Wipe the banana leaf dry and then brush the top side with achiote or vegetable oil.

  2. Scoop up 1/2 cup of the masa and place in the middle of the banana leaf. Spread evenly over the leaf, leaving a 1-inch border around the edges. Place 2-3 tablespoons of pork filling in the middle of the masa.

  3. Fold the top edge down over the filling. Bring the bottom edge up over this. Then fold in both sides to make a rectangular packages. Be careful not to wrap it too tightly or the filling will squeeze out. Flip the package over on the parchment so it is seam side down.

  4. Fold the bottom of the parchment up over the wrapped package. Fold in each side, then roll up, burrito-like, to complete the package. Tie one of the 20-inch pieces of string around the pastel lengthwise and then three 10-inch pieces across the short side.

  5. Bring a large pot of well salted water to boil on the stove. Drop in the prepared pasteles and boil gently for 1 to 1 1/2 hours.

  6. Remove from the water with tongs, remove the outer parchment and serve the pasteles with or without their banana leaf wrapping. Goes well with arroz con gandules.

Variations

  • The recipe above is a basic pasteles filling. Additional items are often added to the filling when the pasteles are wrapped. Add 5 or 6 capers and 1 pimento-stuffed olive to the filling of each pastel. Or add 5-6 cooked garbanzos.

  • Pasteles can also be made with chicken, shrimp or ground beef. For vegetarian pasteles, substitute 2 (15-ounce) cans of drained garbanzos for the pork.

  • Stir a little of the sauce from the filling into the masa to give it extra flavor.

  • Puree 1/2 pound of peeled, chopped calabaza squash with the masa if you like. Or substitute yuca (cassava root) for the yautía.

  • If you want to avoid all the string tying, use aluminum foil to wrap up the pasteles instead of parchment paper.

  • Wrapped, uncooked pasteles freeze well for later use. Cook them directly from the frozen state.

Notes

  • Pasteles are a favorite Puerto Rican dish. They are special occasion food, and no Boricuan Christmas table is complete without them.

  • Don't worry if your first few pasteles look kind of funny. The work will get easier and you will get better at it as you make more of them.

  • Spread the work over more than one day by making the masa and filling up ahead. Chilled masa is much easier to work with. Then gather some family or friends and make the pasteles in an assembly line. The work is much faster this way, and it makes for good family fun.

  • The special ingredients for pasteles--taro root, plantains, banana leaves--can be purchased at most Asian or Latino markets.

"Career Coach" Needed

Hello, my name is Frank Danzo and my company, Career Networking Pro is in the business of helping job seekers get better jobs, whether through career coaching or corporate outplacement.

For the first time, we are expanding nationally and seeking 10-12 entrepreneurial individuals interested in “rolling out” this new service in their area of the country, and/or nationally within a particular industry sector.

We have a unique and highly effective system that puts job seekers in front of hiring authorities. This Proactive Career Networking System has helped hundreds of individuals secure employment in positions they genuinely want. In today’s market it is the advantage a job seeker needs.

However, a key component to the process is the “Career Coach.” This is a conscientious and competently trained business professional who guides the job seeker through our proprietary Proactive Career Networking System.

As a Career Coach, we develop a website for you and drive job seekers to it. As they purchase access to our web-based system, they become prospects for your coaching services, which we know is the “glue” that makes the process work.

December 5-6 is the very first training session for “Career Coaches.” Attendees will be part of an empowered “beta-group” with tremendous earning potential and significant incentives for participating.

If you think that you might enjoy a business helping people in this fundamental aspect of life, advancing their career, call us today at 877-542-5940.

We will send you an “Executive Summary” covering our business model. If you have additional interest after reviewing it we can show you how the Proactive Career Networking System works and even provide you with a copy of my book, “People Hire People, Not Resumes.”

Iron Sharpening Iron Metaphor-Pt2

Part two Volcker on Charlie Rose PBS http://www.charlierose.com/view/interview/10635
Warns Wall Street that it is not business as usual, toxic assets where are they and how will they evolve or how can we absorb the damage. For instance the Commercial Real Estate market and accepting the loss within that arena. Slower economic up swing, bringing the savings and consumption in balance
Rose ask what damage has been done that can't be repaired...beyond what is being done. Overall be more competitive throughout the World. The moral mindset of people who think that Corporations have gotten so big that there is a moral obligation to bail a company out. This damage has and should change through the governance of Congress but if the American People don't know how can they change.
THE TIME LINE
In this case a Time-Line is at the end of a century in Western Civilization calendar and thought. Which is used as a barometer of measurement...for historical and data compilation. From the gathering of this data, we are able to identify patterns of sequence which can narrow our direction, course and specific outcomes.
It is a fascinating time to be alive and in the mix of our evolution in human development and the marriage of science, technology and program software we are able to analyze performances and outcomes. I truly believe that this Country and our deeds and creeds are the best or one of the best that man has to offer other men and the Free Mind or Western World. “I believe that We must strengthen our Constitution and Bill of Rights along with the three branches of Our Government Federally, and Nationally within all States and Territories. Know the Truth and your Role and Responsibilities
Should we be aware of taxation, social security, health care, we have a number of problems that we are faced with within our governmental way of doing business. Volcker States'... 9 months after an inauguration half of the positions in government are vacant. We don't have people in positions that should be who have been vetted. “My question is who is responsible?” Who should be accountable for these positions being vacant. Is it the President, is it the Congress...that's the question?
IF YOU KNOW WHO IS RESPONSIBLE PLEASE SAY SOMETHING!

Paul Volcker comments on Charlie Rose.[PBS Charlie Rose ] A revealing interview embracing the power or lack of given power to the Federal Reserve. [In two parts...] As Volcker; would say the Fed are the only people who have the Money. The Federal Reserve has always been an independent agency made up of powerful financiers who regulate this fiat base system. Conspiracy talk would be that they control the wealth and power within the known Western World or the Banking System.
It does control the flow of the American Peoples currency regulated by Congress and the FDIC (Federal Deposit Insurance Corporation) With its 12 Regulation Boards located throughout The United States, [A Corporation] operated by the Federal Reserve which keeps a watchful eye on its Banks who set up and outlets our currency throughout the united states of America's banking world where...yes dollars and cents go in and out of communities. {How do we capture that ebb and flow?} The distinction in the way words are capitalized upper and lower are to make a distinction giving a understanding people can see how wording is used to deceive people.
Volcker is right they have the money and the power within the United States monetary industrialized World. The question... 80% of the present Admin. Plan is in zinc. 20% needs revision see Volcker on Rose http://www.charlierose.com/view/interview/10631
I'd like to ask does the Federal Reserve serve
the American People? Or do the American People
serve the Federal Reserve?
Is it the will of the Master and what ever be his good pleasure. This is not conveyed in any way nor is their a rational explanation to the American People on how the Monetary System we now have serves the American People and the World. Should we serve, control the monetary system or should it serve and be control by this Nation of People Called the united states of America? Is the Zeitgeist Movement and the Legendary Founder of the Venus Project on to a better system of living? Another question would be to ask shall we stay pat with The United States of America? [which is said to be a corporation that controls the purse strings of the American people] “Are these just rumors?” THATS THE QUESTIONS. Does it matter, its too big to wrap my arms around, and who cares its Friday! Should we who are held responsible for the good will, peace and prosperity to all who venture and are born in this land not have a hand in planning and governing ourselves. Based on facts and sound data understanding the experiential but applying a process for growth and higher order thinking. Understanding that these united states of America are united in their Constitutional Laws, edicts and formation. Understanding the structure and democratic rule of law.
Changes are coming ...since the dawn of historical
man change has been predicted ...eSpecially during
the end of a time line or in the beginning of time line.
“The end of a Century and the beginning of a Century”
In short, our government, which was created by and for us as sovereigns -- free citizens deemed to have the highest authority in the land -- was stolen from us, along with our rights. Keep in mind that, according to the original Constitution, only We the People are sovereign. Government is not sovereign. The Declaration of Independence says, "government is subject to the consent of the governed." That's us -- the sovereigns. When did you last feel like a sovereign? WHEN A SOLDIER COMES HOME
This email is being circulated around the world - please keep it going

When a soldier comes home, he finds it hard....
..to listen to his son whine about being bored.
....to keep a straight face when people complain about potholes.
To be tolerant of people who complain about the hassle of getting ready for work.

...to be understanding when a co-worker
complains about a bad night's sleep.

..to be silent when people pray to God for a new car.

...to control his panic when his wife tells him he
needs to drive slower.

...to be compassionate when a businessman expresses
a fear of flying.

....to keep from laughing when anxious parents say
they're afraid to send their kids off to summer camp.

....to keep from ridiculing someone who
complains about hot weather.

....to control his frustration when a colleague gripes
about his coffee being cold.

....to remain calm when his daughter complains about
having to walk the dog.

.....to be civil to people who complain about their jobs.

....to just walk away when someone says they only get
two weeks of vacation a year.

....to be forgiving when someone says how hard it is to
have a new baby in the house.

The only thing harder than being a Soldier..

Is loving one.

I was asked to pass this on and I will gladly do so,

Will you???
